Vegan Indian Berbere Curry
Heat 1 tbsp of vegetable oil in a large skillet over medium heat. Add 1 finely chopped onion, 3 cloves of minced garlic, grated ginger. Sauté until the onions turn translucent and lightly browned.Stir in 2 tbsp of Berbere Spice Blend to the skillet and coat the onions and aromatics well. Let it cook for a minute to release the flavors.Add one can of diced tomatoes with their juice to the skillet and stir everything together. Allow the mixture to simmer for 5 minutes.Incorporate 2 cups of mixed vegetables into the skillet and stir to combine with the sauce. Instructions:
